Recipe: On-the-Trail Oatmeal

Oatmeal is a camping staple. Here’s my go-to recipe I take with me on trips to the parks. With all dry ingredients, this meal has an incredible shelf-life and packs well for any camping or backpacking trip. The coconut flakes sweeten the oatmeal and add a hint of creaminess without needing to use perishable dairy ingredients.

Ingredients

  • 2 cups old-fashioned oats
  • 1/2 cup dried blueberries
  • 1/4 cup sweetened coconut flakes
  • 1/2 cup almonds
  • 1/2 tsp cinnamon (optional)
  • 1/2 tsp salt

Utensils

  • medium saucepan
  • stove
  • spoon

Directions

At home:

Combine all ingredients into a resealable bag and shake well.

On the road:

When ready to eat, pour desired amount of oatmeal mixture and twice as much boiling water into bowl and stir. Let sit until fully absorbed (about 5 minutes), stirring occasionally. Enjoy.

Try this: For variety, swap out the almonds and blueberries for these combos:

  • Pecans + dried apples
  • macadamia nuts + dried bananas
  • walnuts + chocolate chips
