The secret to this recipe is hard cheese and dry meat. With low moisture content, parmesan can last unrefrigerated for weeks at a time. In this recipe, salami is best preserved encased as a roll and sliced when needed. Less surface area reduces potential for bacteria growth. Vegetables obviously have a limited shelf life so simply omit them if needed longer than 48 hours. Also, because these ingredients are pungent, be extra cautious with wildlife and store in bear canister if packing overnight.

Ingredients

  • 1 roll hard salami
  • 1 red pepper
  • 1 avocado
  • 1 block parmesan cheese
  • 20 Triscuit crackers

On the road:

Slice salami, parmesan, red pepper and avocado.

Top crackers with ingredients. Store remaining food in bear canister. Enjoy.
